Super-Seeded Granola

Crunchy toasted granola packed with oats, nuts and seeds, can be used as cereal, yoghurt, smoothie topper or a snack.

100g (1 cup) gluten-free rolled oats
60g (½ cup) walnuts roughly chopped
50g (⅓ cup) almonds, roughly chopped
50g (⅓ cup) mixed seeds (sunflower, pumpkin, chia, sesame)
20g (⅓ cup) coconut chips
2 tbsp coconut oil, melted
2 tbsp maple syrup
½ tsp sea salt

STEP 1.
Preheat the oven to 165°C (325°F).
Line a large baking tray with parchment paper.
In a large bowl, combine all the ingredients (except the coconut chips as they brown quickly).
Pour in the melted coconut oil and maple syrup. Stir thoroughly to coat everything evenly.
Spread the mixture evenly onto the prepared baking sheet.
Bake for 25 minutes, stirring once halfway through.
STEP 2.
Once golden and fragrant, turn off the oven and sprinkle coconut chips over the granola and put back in the oven.
Leave for another five minutes, then remove from the oven and let it cool completely on the tray (it will crisp up more as it cools).
Once cool, transfer to an airtight jar or container.
