Super-Seeded Granola

Crunchy toasted granola packed with oats, nuts and seeds, can be used as cereal, yoghurt, smoothie topper or a snack.

    • 100g (1 cup) gluten-free rolled oats

    • 60g (½ cup) walnuts roughly chopped

    • 50g (⅓ cup) almonds, roughly chopped

    • 50g (⅓ cup) mixed seeds (sunflower, pumpkin, chia, sesame)

    • 20g (⅓ cup) coconut chips

    • 2 tbsp coconut oil, melted

    • 2 tbsp maple syrup

    • ½ tsp sea salt

  • STEP 1.

    • Preheat the oven to 165°C (325°F).

    • Line a large baking tray with parchment paper.

    • In a large bowl, combine all the ingredients (except the coconut chips as they brown quickly).

    • Pour in the melted coconut oil and maple syrup. Stir thoroughly to coat everything evenly.

    • Spread the mixture evenly onto the prepared baking sheet.

    • Bake for 25 minutes, stirring once halfway through.

    STEP 2.

    • Once golden and fragrant, turn off the oven and sprinkle coconut chips over the granola and put back in the oven.

    • Leave for another five minutes, then remove from the oven and let it cool completely on the tray (it will crisp up more as it cools).

    • Once cool, transfer to an airtight jar or container.
